Normally, I just bake my sweet potatotoes and eat them with nothing on it!  This time, I decided to add a little something.

 

Honey Cinnamon Sweet Potatoes

 

Ingredients

4 Medium Sweet Potatotes peeled & cut into 1-inch cubes

Ingredients
4 sweet potatoes, peeled and cut into 1-inch cubes
1/4 cup extra-virgin olive oil, plus more for drizzling potatoes after cooked
1/4 cup honey
2 teaspoons ground cinnamon
Salt and freshly ground black pepper

 

Directions
Preheat oven to 375 degrees F.

Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the oil, honey, cinnamon, salt and pepper over the potatoes. Roast for 25 to 30 minutes in oven or until tender.

Take sweet potatoes out of the oven and transfer them to a serving platter. Drizzle with more extra-virgin olive oil.


 

 

Microwave Cinnamon Maple Breakfast Quinoa

 

A quick and healthy breakfast!

INGREDIENTS:

 

1/2 cup quinoa1 cup cold water1/2 teaspoon cinnamon + more for garnish2 teaspoons buttermilk or cream, to tastemaple syrup, to tastebanana slices

 

DIRECTIONS:

 

Place quinoa in water and rinse well.

Drain quinoa, then stir in 1 cup cold water, 1/2 teaspoon cinnamon and 1 teaspoon butter. Microwave on high for 4 minutes. Stir and microwave 3 more minutes. Remove from microwave, cover with foil and sit 2 minutes. Fluff quinoa and stir in remaining butter. Divide between 2 bowls and top with milk, maple syrup, banana slices and cinnamon to taste.

 

 

Turkey & Quinoa Stuffed Peppers

 

Makes 6 Servings 

 

INGREDIENTS:


•1 lb lean chopped turkey meat
•Franks red hot sauce
•1/4 onion, minced
• lemon pepper to taste
• Pepper to taste
• 3 large sweet red bell peppers, washed
•1 cup fat free chicken broth
•1/4 cup tomato sauce
•1 1/2 cups cooked rice
•Olive oil spray
•1 avocado

 

DIRECTIONS:


Heat oven to 400°. Place some olive oil in a medium size saute pan and heat on a medium flame. Add onion and red hot sauce. Saute about 2 minutes and add ground turkey. Season with lemon pepper and pepper and let cook for several minutes until meat is completely cooked through. Add 1/4 cup of tomato sauce and 1/2 cup of chicken broth, mix well and simmer on low for about 5 minutes. Combine cooked quinoa/rice and meat together.

Cut the bell peppers in half lengthwise, and remove all seeds. Place in a baking dish. Spoon the meat mixture into each pepper half and fill it with as much as you can. Place all stuffed pepper halves on the baking dish and pour the remainder of the chicken broth on the bottom of the pan. Cover tight with aluminum foil and bake for about 35 minutes. Top with avocado!

 

 

Turkey Sausage & Peppers

 

This is really good and you can definitely make it your own!   

 

INGREDIENTS:

 

  • 2 lbs. Smoked Turkey Sausage

  • 1 Green, 1 Red, 1 Yellow Bell Pepper

  • 1 small onion

  • 1 can Diced Tomatoes

  • 2 tbs. minced garlic

  • Seasonings to taste (sea salt, pepper, orgeno)

  • 2 tbs. extra virgin olive oil

  • 1/2 cup water

 

DIRECTIONS:


Heat oil over medium heat.  Add peppers and onion. Sautee until soft, 3 minutes or so.  Add garlic and seasonings and satuee a couple more minutes.  Add water (for less juice, use less water), tomoatoes and sausage.  Cover and simmer for 15-20 minutes.  Whala!!   Simple, easy and tasty dinner!
